"Rami"

Ramì is a little lighter and more approachable for white wine drinkers first stepping out into the "orange wine" category. The skin contact is expressive, but the flavors are approachable and not too intense. A crisp wine with tangerine, orchard fruits, thyme, jasmine, ginger, and spice. A medium-bodied wine with delicate tannins and a dry minerality of wild yeast and salted almond followed by a balanced finish.

POINTS OF INTEREST

Unlike the Pithos Bianco, this skin-contact white wine does not spend time in Amphora. This allows for more clarity in the fruit flavors, offering a more crisp style with bright acidity. With two local grapes, Inzolia and now Grillo, (previous vintages had Grecanico) the COS team craft another captivating wine from their organic estate in southeastern Sicily, below the Hyblaean mountain range.

Skin contact white wine can taste strange and unfamiliar. Commonly referred to as "orange wine," because of the color imparted by the skins, these wines can offer a new and exciting way to experience the wine rainbow. Exotic flavors abound with dried apricot, orange zest, herbal tea, cooking spice, banana bread, and dried grass. Noticeable tannins from the skins balance with restrained acidity for a dry, juicy finish.

POINTS OF INTEREST

COS started making this Amphora aged, skin contact wine in 2008. Think of these amber wines as white grapes made like red wine. This natural wine producer, based in Sicily, was part of the first wave of modern producers experimenting in the late 90s with methods that shunned the commercial farming and production of the time. These curious techniques are recognized now around the world.

Zibibbo (Muscat di Alexandria)

The Arabic word "Zibibbo "is the official Italian name for Moscato d'Alessandria. One of the world's oldest grape varieties, this wine is intensely aromatic with expressive floral elements like lavender, lemon balm, Meyer lemon, honey comb, and apricot. Very fruity but dry with a soft acidity that is round, full, and coating. This wine will confuse your taste buds with smells that allude to sweetness but with a taste that is dry and savory. A truly pleasurable experience.

POINTS OF INTEREST

The stable of Amphora wines from COS has grown with this edition of the Zibibbo in Pithos. A compelling example of a dry Moscato with skin contact and aging in clay vessels. It stands out as something different. Like all COS wines, this is spontaneous wild yeast fermentation from their certified organic vineyards. It spends more than 30 days on the skins and 6 months in the Amphora Pithos. Only 500 cases produced.

An exciting indigenous grape from Sicily, Frappato will have it's moment in the sun with the current demand for easy drinking, light bodied wines with captivating flavor. The tart red fruits of cherry and strawberry are vibrant and aromatic with low tannins and fresh acidity. Very easy to drink, this wine is for fans of Burgundy, Beaujolais, Willamette, and Garnacha. It navigates the warm temperatures of Sicily with aplomb.

POINTS OF INTEREST

The sandy limestone soils of the Vittoria area in Sicily are ideal for making aromatic and lively wines. The COS winery farms over 12 hectares of this exciting grape. Certified organic with biodynamic principles, look no further for a premium example of Frappato. Like Grenache Garnacha, this grape retains acidity and freshness even in the hottest of vintages. Native yeast fermentation and concrete aging help maintain the natural character.

Nero d'Avolo

Nero d'Avola was the rising star of Sicily when high alcohol and power were the goal. COS, instead, focused on expressing the vibrant dark energy of this beautiful native grape. Nero d'Avola is naturally high in acidity, and this vibrant example reveals that with dark berry fruits, cassis, and plum layered with violets, smoked herbs, leather, and rhubarb. This wine shows crisp, crunchy tannins with a good sapidity that lingers.

POINTS OF INTEREST

COS started, with just three young friends looking to source quality grapes and manage family vineyards. From day one they were looking to express the natural fruits of the earth. They produced fresh, low alcohol wines with native yeast and organic farming and now the trends have caught up to these pioneers. The name "Nero di Lupo" is a nod to the Contrada vineyard first sourced for this wine, Fossa di Lupo The Pit of the Wolf.

In 2000 the COS winery embarked on a new adventure, aging wines in clay vessels buried underground, seeking to express the terroir of southeastern Sicily as transparently as possible. The amphora heightens the elegance and oxygenation for more developed flavors. Intense floral aromatics of violet combine with red plum, wild black fruits, and herbal complexities. Medium bodied and energetic, the acidity softens with oxygen for a smooth, elegant finish.

POINTS OF INTEREST

This wine tells a story. The history of wine is almost as long as the story of civilization and it has been fashioned in different ways across the globe for millennia. Before the use of oak barrels, clay was used for storing and aging wine. This wine is a fascinating look into the minerality and character of the Cerasuolo di Vittoria region especially when compared to COS' classic DOCG aged in barrel.

An iconic wine from one of the most influential producers in Sicily. The Cerasuolo Classico is characterized by bright, wild red fruits, energetic and complex with great structure. With time the wine relaxes to express smoked herbs, dried flowers, and leathery tobacco. A medium bodied wine with nuanced tannins that develop with age. This wine captures the life and essence of southeastern Sicily with freshness.

COS was started by 3 friends fresh outta high school in 1980. With idealistic views on farming and a natural approach to winemaking, the goal was to express terroir and the true identity of their region. COS has helped shape the way we think about wine over the last 4 decades. Certified organic with biodynamic principles, this benchmark wine, Cerasuolo di Vittoria, received DOCG status in 2005, the first and only DOCG in Sicily.

Cerasuolo di Vittoria Delle Fontane

A crowning achievement for COS; to take something great, Cerasuolo di Vittoria, and make it even better by choosing the best barrel from the best parcel. What stands out is the depth and concentration of fruit in this wine. Dense dark red fruits like raspberry and pomegranate balance savory notes of wild herbs, anise seed, leather, spice, and black olive. The palate is firm but generous with fine tannins that can age well for decades.

POINTS OF INTEREST

The Contrada vineyard area of Fontane is one of the two key sites for the COS winery. This wine is given the vineyard designation on the bottle not just because it is sourced from this single vineyard, but because it represents the best fruit each year from this specific site. After one year, the best 4,000 liter Slavonian oak barrel is selected to age for an additional year and bottled as this special cuvee.

"Maldafrica"

50% Cabernet Sauvignon 50% Merlot

A Bordeaux style blend that expresses the unique character of the Vittoria region in southeastern Sicily. Nuanced and lively with elegant aromatics that leans toward the Merlot for black cherry, juicy red plum, and subtle notes of flowers, chocolate, and spice. The palate confirms the Cabernet with a granitic minerality, black currant, and grippy tannins that linger in a refreshing way with beautiful harmony.

POINTS OF INTEREST

Just one barrel of this wine is produced from three hectares of Merlot and Cabernet Sauvignon. The name Maldafrica alludes to the fact that this part of Sicily is further south than parts of Africa. The variegated influences on Sicily cannot be overstated. From ancient civilizations originating from Africa, Europe, and the Middle East, this island has distilled many identities into one. Here is another melodious tune from a local artist.

Contrada (Nero d’Avola)

100% Nero d’Avola

This wine has both power and grace and stands out as a definitive expression of Sicily’s most important red grape, Nero d’Avola, officially known as Calabrese. Complex dark, red and purple fruits are complimented by deep savory notes of forest floor, leather, and smoked spices. The body is firm but not full and the finish is textured but not aggressive. This wine will age supremely.

POINTS OF INTEREST

This wine highlights the terroir and limestone soil that make this part of Sicily so unique. On a high plateau, overlooking an ancient riverbed, the red sand and iron rich clay give way to a dense limestone bedrock. This cuvee is produced from the best Nero d’Avola at the organically farmed Bastonaca vineyard. One of the finest, most elegant examples of Nero d’Avola.

This is a one-of-a-kind wine experience. The bubbles are delicate and subdued and the color is a golden orange from red grapes crushed with just a few hours of skin-contact and fermented in clay. Rich flavors of butterscotch and apricot are combined with a mineral character of beeswax and natural yeast. For fans of Pet-Nat and Natural wine flavors, with clarity and a surprising depth of character.

POINTS OF INTEREST

Metodo Classico is Italian for the Champagne method, but this wine is far from Champagne in style. It utilizes the natural wine and wild yeast with no added sugars or yeast. After fermentation of the first vintage in amphora, the wine is aged in tank on the lees for one year. From the following vintage, a small percentage of wild fermenting must is added to the tank and then transferred to bottle for the 2nd fermentation. Aged on the lees, in bottle, for an additional 18 months, the wine is disgorged without dosage.
